To make Quiddrink a Ruby colour Take 2 pound of Pippins, beeing pared & cutt in peices, & put them in a Posnet with a quart of faire water, & so let them boile until they bee tender: then wring out all the liquid substance from them, then put unto it a pound of clarified sugar, & so let it boile, till it come to its colour, & thicknes, then print it with your moulds: then boxe it, & you may keepe it all the yeere. To make Quiddrink an Amber colour. Take one pound of Pippins beeing pared, & cutt in peices, & so let them boyle tender in a pint of faire water. Then wring out all the water from them; then put into half a pound of refined Sugar, & so let it boile, till it come to its colour, & thicknes: then print it &c.
