A Plum Cake A pound and half of Flour well dried, a pound and half of Currants, one pound of Butter, one pound of sugar, nine Eggs leave out one white, two ounces of Almonds two ounces of Criton, two ounces of Lemon Peel, a small Nutmeg, and a Cup of Brandy, beat altogether an Hour, bake it an Hour and three quarters in a quick oven. Small Plum Puddings Three spoonfuls of Flour, three Eggs, half a pound of Suet, half a pound of Raisins, three spoonfuls of Sugar, a whole nutmeg, mix together without Milk an Hour boils them Apple Cheese cakes Half a pound of Apples grated, half a pound of Sugar beat and sifted, half a pound of Butter clarified, six Eggs, leaving out one of the whites and the Rinds of two Lemons NB the eggs put to when cold
