50 Apple Ginger As many Ripston Pippins as will make the quantity of Ginger required, pare & cut them in pieces the fo[illegible] of ginger put them into the [illegible] pan with rather more than this[illegible] [illegible] Sugar as much essence of ginger as will make them of a proper heat, & very little to at[illegible] boil gently until transparent, then put the apples into small jars & give the syrup a quick boil before you [put] it over , in cloth with [illegible]. American Crab Apples preserve whole 1 lb of loaf sugar to a quart of fruit roll the sugar and lay alternate layers of that & the apples in a stone jar cover close with bladder put the jar [illegible] to at[illegible] and boil thoroly about 2 hours or rather until the crabs are quite soft
