55. Forcemeat for Turkey or Veal Suet, Bread crumbs, Lemon peel, Nutmeg, a little Salt & pepper. The whole mixed up with the yolk & white of egg both beaten. Soda Cake 1 lb. of flour 1 drachm of Soda, 2 Scruples of tartaric acid 1/2 lb of Currants 1/4 [lb?] of Sugar 1/2 a pint of milk 1/4 lb of butter Mix the soda with the flour, then [illegible] in the butter, after which add the sugar & currants with the milk cold an egg or two may be added with the milk for plain rock cakes, 1 lb. of flour with an addition [illegible] are very good. Rock Cakes 1/2 lb of flour 1/2 lb. Sugar, 1/2 lb of Currants 1/4 lb of butter [well?] Mixed together add the egg well beaten - a few bitter almonds & a little Brandy wine or orange flower [illegible] is [illegible]
