Gooseberry Cheese Take any quantity of green gooseberries put them into a stone jar without any water in them [drawn?] close & put them either into an oven or a boiler of water to coddle when sufficiently done pulp them thro a sieve & to every pint of pulp add 3/4 of a lb of loaf sugar boil it an hour & put into moulds Mrs [] Sponge Cake Take 5 eggs beat the whites & yolks seperately then mix them & shake in the weight of 5 eggs of loaf sugar first then the weight of three in flour & half a grated lemon not dried Mind to avoid beating the above it must only be stirred but you must not have off after you have once begun till all the ingredients are in & well mixed then butter yr. tin & [send?] it to be baked as quickly as possible this will make a cake of the size of two penny [rolls?]
