of fruit & lay in the rice [illegible] by spoonfuls, bake it till the rice [illegible illegible] brown color on the surface _______________ [illegible] omelette [illegible] apples as for sauce sweeten with loaf sugar add a little lemon juice [illegible] 2 3 or four eggs well beaten [illegible] a shallow pudding dish [illegible illegible illegible]sides & bottom with bread crumbs thick enough to form a crust [illegible] turned out put the apple & [illegible]the dish + bake it sift a little sugar over when turned out. 2 eggs will do _______________ Small mashed? puddings 1/4 lb grated bread 1/4 lbs butter 2 oz of [illegible] orange& lemon zest 4 eggs the whites of 2 well beaten with 3oz of sugar & a little nutmeg 1/2 a pint of milk boiled and poured over the bread the melted butter to be poured over hot to be baked in the cups & served with lime sauce _________________ A pretty dish for 2nd course [illegible] some rice bell, put some good apples into a saucepan with some lemon peels cinnamon & sugar to a paste boil them well & when done please them in the deck dish putting the rice [illegible] it beat like one egg
