Imitation Sausages. Any kind of cold roasted meat mince it very small season with white pepper salt & dry thyme rubbed through a seive & a small quantity of onion or eschelot nicely minced & flavour with parsley or any sweet herb a few crumbs of bread & a little fat must be minced with the meat. Work it up with a raw egg roll them into the form of sausages glaze them with the yolk of egg roll them in bread crumbs fry them till they are a very fine brown in dripping. dish [in?] mashed potatoes.
