The Whip 1/2 a pint good cream, put white sugar to your taste, a small piece of mace, & a piece of lemon peel, let it stand two hours, then add white wine sufficient to flavour it nicely & whip it well; either with a whisp or a chocolate Mill; lay it on a fish drainer to drain & then put it on your dish.
