Kedgeree. Take a small quantity of fresh fish which has been boiled & pot cold (any fish except skait & salmon will do) mince it small - boil 4 eggs (hard) & a cupful of rice, mince them together, & put into a stew pan with a good piece of butter, mix & season with cayenne & salt & serve very hot. A few oysters mixed with it is a great improvement.
