V. Oven heat must be regulated before mixing cake. VI. Fill pans for layer cake 2/3 full. VII. Watch carefully while baking. 1st. quarter, mixture should rise. 2nd quarter, continue to rise and begin to brown. 3rd. quarter, continue browning. 4th. quarter, continue baking and shrink from sides of pan. VIII. Cake should not be moved in the oven until it has risen to its full height, about 3rd. quarter. IX. Arrange to have nothing else in the oven when baking cake and place loaves as near center of oven as possible. X. If a piece of white writing paper turns a light brown in five minutes, the oven is right for sponge cake and for butter cakes in loaves.
