To Make Cowslip Wine Boil twelve gallon's of watter A quarter of an hour then add two pounds and A halfe of Suger to every Gallon of water then boil it as Long as the Seam rises till it Clears it selfe when almost Cold pour it into A tub with one spoonfull of yest Let it worke one day then put In thirty two quarts of Cowlslip flowrs and Let it worke two or three days then put it all into A barrel with the parings of twelve lemons the same of oranges make the Juice of them into A thick Syrop with two or three pounds of Loafe sugar when the wine has done working add the syrup and as much brandy as you think proper to it then stop up your barrel verry well and let it stand two or three month then bottle it it is bet to put a few whits of Eggs in with your water & sugar it clears it so much better well Skim it
