Mother Coleman's receipt for Ginger Pound Cake 1 1/2 lbs of Butter, 1 1/2 of sugar, 2 small sized bowels of thick cream, 2 of black molasses. 2 teaspoons of Saleratus, 6 bowels of Flour, 6 eggs, cloves, cinnamon, and ginger, put all in your dish at once, and work with your hand. A nice Tea Cake 3/4 lb of butter, 1 lb of Flour, 1 of sugar, 9 eggs, 1 nutmeg, roll the cakes in loaf, sugar dropped on tins, and baked. Paper Jumbles 1 lb of Loaf Sugar, 1 of Butter, 1 1/4 of flour, 2 eggs, 1 nutmeg, and a half gill of Brandy. Another Way. 1 lb of Sugar, 1 of flour, add pounded spice of any kind, and pass them through a seive, 4 eggs, 3/4 lb of melted butter, knead all well together, and bake on tins.
