Another Way. Scald the rice flour, and when cold, mix half wheat or corn meal, rise with yeast, in the usial way. Another way Stir 1 qt of Rice flour into as much warm water as will make a thick pap, then put it on the fire, and add 2 or 3 qts of milk or warm water, stirring it until it boils, let it cool, then put in the yeast, add a little salt, put it to rise in a warm place, and when risen bake it. Rice Johny Cakes or waffels. To 3 spoonsful of soft boiled rice add a teacup of milk or water, 6 spoonsfull of Rice flour, and mix well. Bake in one 1 johney cake or 6 waffels. Rice Butter Cakes. Mix 1/4 of wheat to 3/4 lb of Rice Flour, add some salt and yeast, enough to raise it, then bake them as buckwheat cakes.
