Soups &c, &c Mock Turtle Soup. Take 1 calfs head, and boil it till very tender, then take it out on a large dish, and pick out all the bones, and chop up the meat in small pieces, and put it in the soup. Take sausage meat, and make little balls, and fry them hard; put them in the soup tureen. Make dough balls, and put them in the soup to boil. Mace salt pepper, parsely, cloves, and sweet margarion. Thicken it with flour and water mixed together, and let it boil a little while, then pour the soup in the soup tureen, over the sausages balls.
