Potato Pudding Boil very dry a pound an 1/2. of very dry mealy potatoes mash them quite smooth while hot, mix with them three ounces of butter. five or six of sugar four eggs, a pinch of salt and the rind of a lemon finly grated. melt butter a dish line it with a light puff paste pour the mixture in and bake in a moderate oven for an hour, sift sugar over it and serve.
