Nice cake 4 eggs well beaten, (whites & yolks serarately,) 4 light cups flour, 1 cup butter, 1 of sugar, 1 teaspoon soda, & 1 of cream tartar. 1/2 nutmeg. Lemon Jumbles 1 lb flour 3/4 lb sugar, 1/2 lb butter, whites of 4 eggs well beaten, 1 nutmeg, & the juice of one lemon. Sponge cake. 13 eggs, weight of 6 in flour, & 12 in sugar, the juice of 2 lemons, & rind of 3. Beat the yolks & sugar together, beat the whites separately, mix them with the yolks & sugar. Add a handful of flour then the lemon juice, which must first be strained, then the remainder of the flour, very gradually, & stir it in very slowly to prevent its falling. lastly add the grated rind. Do not beat after it is all in. Jelly cake can be made in the same way, & baked in plates. Sugar cake Rub 1 lb butter into 2 lbs flour, 1 lb sugar, & 6 eggs add lemon juice or spice. After cutting them out, grate sugar over them before baking.
