Blackberry Jam Take blackberries before they are ripe (when red) Pick them & put them into pots, tie them over with a Bladder covered very close put them in to a kettle of Water which is to be kept boiling till they reduced to a pulp then strain them & to a pint of juice put a lb of powdered sugar boil into a jelly & put it by for use N.B. the Pot in which the Berries are put is to stand on the bottom no water to come near the fruit they are to be reduced by heat alone.
