(12) A Goose or Turkey Pye Bone your Goose or Turkey and Season them very Well with Pepper, Sallt, and Mace and Rub the Seasoning very well in Every part of it and let it lye two Days Then Raise your Pye and let the sides and bottom be pretty thick and when it is Pretty Cold lay in your Goose &c ..and Cover it over With Butter put on the lid and let it Bake three or four hours When you draw it out of the Oven. pour a good deal of Melted Butter into it.
