(39) To Dress a Pike Gut your Pike and Wash it well and dry it With a Cloth, and throw some salt over it then set it over the fire in a pan with as much water as will cover it mixt with Vinegar and a handfull of salt, when it is boild Enough drain the water from it very well and draw some butter with half a pint of White Wine, and beat up the yolks of four Eggs with the juice of Lemon and put them into your butter, and toss it about till it be thick, then dish up your Pike and garnish it with Barberry's and Lemon
