(52) To Pott Beef Take a Round of Beef and cut some Stakes of it. throw a little Salt petre over them and let them lye for three or four Days then lay them in a Crock, with a good deal of butter or Beef suet about them and let them bake till they be very tender, then pound them very well in a Morter and pour Melted Butter to it as you pound it to make it Mellow with a little pepper salt Cloves. Mace. and all spice all ground together and season'd to your likeing then put it in your pot and let it lye in a Cool Oven for a quarter of an hour and then fill them up Wth Melted butter
