To Preserve Green Plumbs Prick your Plumbs down the Stem with a large pin and let them lye in fair Water three days Changing the Water every twelve Hours then drain them from the Water, and lay them in a Single layer, in the bottom of your Pan, then take half Water and half Clarified Sugar, as much as will cover them, and pour over them and let them Stand three days more given them in that time three Heats over the fire, then drain.
