(75) then take their Weight of Jamaica Sugar & preserve them as you do any other fruit &c. To Preserve Cherry's Take your large Marsella Cherries, & cut the Stalks half off. Stone them and take their Weight in Loaf Sugar & Dissolve it in your Preserveing Pan, let it boil & Skim it well then put in your Cherrys. & let them boil till they are Clear. then put them in your Glasses and pour the Syrop over them, and cover them With a paper dipt in Brandy &c. Damzons are done the Same Way.
