(19) To make pretty cakes of sugar like snow Take halfe a pound of double refin'd sugar [fearsed?] then have ready some Gumdragon steeped in some oring flower water & some froth of Eggs. then rub it & make it pretty stif with your sugar. then drop it upon papers the bigness of a 5 shillings peice. if you please you may [spot?] some of them rid or any other colour then dry them in your stove. To Make Lemon wafers or drops Take your double refin'd sugar & put it in a silver ladle. it must be left & [fearst?]. then put to it as mush water as will make it very stif. then set it over the fire to boile & when it is well boiled. then pour it round upon find guilded paper. & pin it up to dry that which is for drops you must drop it upon paper when you have boiled your sugar well. you must put in Juice of Lemon & give it a good stir before you power it upon your papers. it must not boile after your Lemon is in.
