(137) To make snow Take a pint of Cream. the Juice of a Lemon. some white wine. some sack. power them high into your Cream by little & little. then take a rod & tie to it some Rosemary & Lemon pill & beat your Cream with it. until it be a white froth till the Cream be done. so lay it either on Chinay plates or put it in glasses. To make a Cold Syllibub Take some white wine & beere. & sweeten it with sugar in the pot you design to serve it up in then take your Cream & boile it with some sugar & stir it till it be as cold as new milk. then power it in holding it very high & let it stand a night & a day before you use it.
