(179) To butter Lobsters Take your Lobsters when they are boiled. take out the meat out of the shells put them into a dish with a little faire water & a little salt & a bit of nutmeg. & when it is very hot. shake it well with a lump of butter a little white wine the yolks of 2 Eggs well beaten so shake them very well & when it is hot give it a good shake then fill the dish with sippits so serve it up.
