(213) To make a pepper Cake thin & baked in pans. Take 3 pound of Treakle & a pint of ale. out of the gilefat with 2 or 3 spoonfulls of yest. & if you cannot git out of the gilefat. you must warm your ale before you put in your yest & put to it 2 spoonfulls of Coriander seeds: Caraway seeds & Anniseeds of each a handfull. & as much bett ginger. if you please you may put in a little Jamaica pepper finely bett. stir all well together with as much flower as will make them as thick as a puddin. then cut in some Candid oring & Lemon butter your pans & put them in. & so bake them & when they come out of the oven rub them over with [an?] Egg. but remember to stick the Lemon [?] & [?] in your pans.
