To make Elder Wine Take ye Eder Berries and Press out ye juice to every Gallon of Juice put 2 Gallons of Spring Water and 1/2 a Gallon of y.r Liquor [Mist?] put 2 Lb of ye Best Powder sugar and Let them all Boyle together as long as any Scum arises then Let it stand till it be cold Enough to put a Little Ale Yeast in to it Let it Work 2 or 3 Days as you see occasion, then put it into a Wine Cask when you see it has done Working stop it up Close and Let it Stand 2 Months if not Clear 3 Months then Bottle it of N.B. When you have Crushed the Berries well w/th yr. Hands strain them through a Hair Bagg --
