A Hog's head Like Brown Wash it well, boil it till the Bones will Come out when Cold Put the inside of th Cheeks together with Salt, between them put the Ear rown the Sides put the Cheeks into a Cloth Press them into a a Sieve, or any thing round put on a Weight for two days have ready a Pickle of Salt & Water with about a Pint of Malt boild together - when Cold put in the Head
