Lent Pies Lady Hammer To Three pound of hard eggs four Pd of the best Beef Suet let the Eggs & the Suet be choped pretty fine add to them 3 pd of Currants well washed dried & Pick'd clean from the Stalks half and ounce of Mace half a pd of loaf Sugar powdered the Juice of three Lemons & the Peel of one very finely shred half a pint of Sack or Madeira Wine a few grains of Salt & three Qurs of a pd of Candied Citron NB the Eggs must not be chop'd so fine as the Suet about eleven Eggs will weigh a pound. Bak'd Custards Lady Hammer To 1 Quart of Cream put 12 yolks & 6 whites of Eggs boil in one half of the Cream a little mace & Nutmeg for a little while, then take
