A good way to dress Knuckle of veal take a Knuckle of veal & and cut off all the Meat in small pieces and season it with Pepper and salt put it in a pot and half cover. with the liquor in which you have boil'd the Bone - set it in a pretty hot oven - when it is half done rub the yolk of an Egg boil'd hard with a tea spoonful of flour [illegible] shake it amongst the veal and put it in the oven [illegible] till it is done enough -
