To make Clary Wine Sir Tho: Haurner To Twenty Gallons of Water put Sixty Pounds of Loaf Sugar - then take the whites of Twelve Eggs, and beat them very well, and put them to your Sugar and Water; - boil them together, skimming it well till it is fine: take it out of the Copper, and put it into a Tub; and let it stand till cold - put to it when cold, a Bushell of Clary flowers and a Pint of Ale yeast, stirring it well together twice a day till it has done working; and when you Turn it into the Barrel, add a Bottle of Brandy, and in Eight or Ten Months Bottle it. - To make Treacle Beer Twelve quarts of water Milk warm - Three pound of Treacle or as you like it for Sweetness - a handful of Ginger bruised, and a Tea Cup full of yeast - Cover it up close and it will be fit for use in a few days -
