31 Recipe for salting Beef, Tongues &c Get a [tub?] of pure rain or River Water (the River Water is however best) let the Tub be nearly full, and [put?] across it a pair of Tongs or two pieces of thin Wood, upon which set your [Beef?] or meat, distant about an Inch from the Water, then heap as much Salt upon [the?] Meat as will lay upon it- let it stand in this way for twenty four hours, after which the meat may be removed and [boded?] when it will be found to have imbibed as much of the Salt, as tho it had been in Pickle for six Weeks - [left margin] Nancy, [illegible] 21 Octo 1828 Rx Aluminis 3i zinci [helphat?] 31 Mft.
