83 Making Ice Miss Birdheads 3 parts of Cream to one pd of Jam either Raspberry or [illegible] to be well beaten & strained; put into Pewter Mould adding a little Lemon juice then put into Ice pails two handfulls of Salt to be put into the pail agitate it for ten Minutes then left and again repeated in the same time allowing it to remain for 1/2 an hour after which it is fit to use. A middle sized round of beef will take 3 hours boiling - Roast beef 10 lbs will take 1 1/2 hour or 3 if thick Roast veal 1/4 hour per lb. (Middling size.) To boil a tongue if dried it Must be soaked all night & boiled 3 hours if out of pickle wash it only & boil 2 hours peel it & run a silver skewer through it.
