fresh, instead of adding old yeast put a Qt of the old stock and salt the Sponge when you set it. In summer it requires to be kept very cool while it is fixing in Winter very warm 90 Apple Jelly very good for desserts. Pare & core some of the best flavored & most juicy apples put them into a stew pan with boiling water just enough to prevent them from sticking to the Pan let them boil fast till the apples are quite broken to pieces then run them through a flannel bag & let the liquor stand all night them pour it through
