& water till it is perfectly clear taking off the scum then put the Marmalade into jars closed with Brandy papers (Mrs [] 96 Orange Wine Ten gallons of Water (wine measure 30 lbs of refined Sugar the Whites of 12 eggs let it boil half an hour When cool add the juice of 100 Seville Oranges with the Peels of half of them ferment it with new Yeast in a glass Vessel two days when it is to be put into a Cask with 2 Bottles of Brandy it may be bottled off in Six Months if required.
