To preserve cucumbers Take small and large Cucumbers, the greenest and most free form seeds, cut the large ones and take out the seeds, put them in strong salt & water with a Cabbage leaf and the Joot covered, set in a warm place [if?] they are yellow, then bash and set them over the fire with a little salt in the bater and covered with a cabbage leaf, don't let them boil, If they are not of a fire colour change the water which must be hot when they are a good green take them from the fire and let them stand covered with cold, then put them in cold water for 2 days, changing it twice a Day to take
