To make pancakes ------ ------ take 4 eggs beat y:an well then put to them a pint of cream and some salt and spice then make your butter as thick as is usuall for pancake beat them again then take 3 quarters of a pound of a pound of fresh butter melt it and put it hot to y.e batter then beat it make your frying pan very clean and hot- pour therein one spoonfull of the batter which if it be right will run thin you must have a very quick fire you - must put no lard into the pan for they will fry themselves To Roast a pike ------ ------ Seale y.E pike open it under y.E quills and guts - then take Oysters Anchovies and sweet herbs; grated bread chop them small and make it up with peper salt and two or three yolks of Eggs and some Capers and pickelled - Mushrooms cut small put all into y.e pikes belley through the quills, strew it over with sweet herbs grated bread - and some Onions if you please. wash your pike over with melted butter and Eggs put in what spice you like put it in a pan and pour in as much claret and gravey as will cover it so set it in an oven an hour will bake a large one______ ______ ______ ______
