To make Rasberry Wine To every quart of Water take a Pound of find Sugar, boil it well together 'till the Scum is all off when it is almost Cold pour it upon as many Quarts of Rasberries as you have Water; which must be well broke w your Hands 'till they are all alike; keep them Stirring twice a Day for 3 Days; then Strain it thro' a Flannel Bag, and Stop it up. you may bottle it off in a month's Time To make Rasberry Wine another way To every Quart of the Juice of Rasberries, put a pint of Water, and to every pound of Liquor a pound of fine Sugar; then Set it on the Fire to Boyl halfe an Hour, taking off the Scum as it rises, then Set it to Cool, and when it is quite Cold put it in a Vessel and let it Stand 10 Weekes or Something more if the Weather proves Cold; when it is Settled Battle it, and it will keep Two Years
