Directions for Boiling Potatoes The potatoes should be as much as possible of the same size - They must be washed clean & without paring or scraping put into a saucepan with cold water not sufficient to cover them, as they produce themselves before they boil a quantity of fluid - If the Potatoes be a good size it will be necessary as soon as they begin to boil to throw in some cold water occasionally, until the Potatoes are boiled to the heart - which will take from 1/2 hour to hour & 1/4 according to size - throw in a little salt occasionally & the slower they are cooked the better When boiled pour off the water & evaporate the moisture by replacing the vessel on the Fire, this makes the Potatoes dry & mealy -
