Pickle to Keep collared [Bieure?] 3 Quarts of water 1 quart of wine 1/2 pint of vinegar 1/2 pint of Beer A large table spoonful of salt, ditto of brown sugar Stir these taste to assertain their [illegible] beer or wine absolutely predominate, add a little of [lettens?] should it be requisite Add two tea spoonsful of Allspice, & the same of whole Pepper. Boil all together well for 1/2 an hour, strain through a sieve, When cold pour off the clean for use The pickle requires to be boiled up again from time to time. Giblet Soup Take a pt of Giblets, scald & cut them in pieces, put them on with a quart of water, or liquor, with pepper & salt, a Turnip Carrots & Onions, stew these gently for five or six hours take out the vegetables, mix a small lump of butter, with flour, & put it in with some Cayenne, & a Glass of white wine, when served Boil the livers in a quart of water till tender then put it into the Soup Tureen
