[Gatum?] de [Porun?] Peel, core, & slice some good brilesky apples, to a lb of Apples add not quite a 1/4 lb of sugar with two or three Table spoonfulls of water, & the rind of one lemon grated, boil it till quite a thick juice, put it into a mould - to be eaten with cream & custard - Rice shape A tea cup full of rice, put into a pint of new milk, boil it well, flavour with [Cinnamon?] Orange flower water, & sweeten it to taste with white sugar, wet a mould with cold water, & put in the rice, let it stay till next day put cream over it when turned out, with jam or apple round the dish George the 4th Pudding. (Mrs. Cottrell 1 pint of boiling cream, the yolk of six eggs, the rind of two lemons boiled in milk, pounded sugar to your taste, strained into a buttered mould and boiled till set Turn it out when cold and serve with
