Medlar Guava Take Medlars when quite ripe wash them i put them into a preserving with as much water as will cover them. Let them simmer slowly till they become a pulp, then drip the pulp through a jelly bag, To every pint of juice add 1 lb of loaf sugar boil it for an hour and a half or more untill it appears likely to jelly stiff then pour it into moulds or jars the stiffer the jelly the more it resembles guava Miss Bs Cook found it required more then enough water to cover the fruit and added a little isinglass to clear it
