till it be new milk warm then put to it one spoonfull of good yearning and have in reading a larg seive with a yard of thin scots cloath over it & when it is yearnd take it up as whol as you can and lay it into the seive where it must drain two hours then put it into ye chesswood & lay one pound weight upon it, & turn it every two hours after the first turning lay on three pound, the next morning take it out of the chesswood and rub some salt on both sides and lay nettles upon it. Take care the curd be very tender & have a fine dry cloath ready every time you turn it.
