Mins Cake Take two pounds of ye finest flour, and a pound & half of double refined sugar beaten and sifted mix them together and dry them by the fire till you prepare your other materials. Take two pounds of butter beat it with your hand till it be very soft like cream; then break in the yolks of eighteen eggs and beat them & the butter together till all appear like butter; then take ten of the whites of your eggs beaten up to a froth and sett them bye you till you have beaten in abt one half of your dryd flour & sugr. then add the whites of eggs so beaten up after this beat in the remainder of your flour & sugr wth three ounces of carroway seeds beat it one hour put it in yr pan & bake it two hours - you may add tincture of cinnamon or ambergrease as yo please
