Herefordshire Cyder After the apples have been taken from the trees let them remain about three weeks. Then grind them as smale as possible & press the pulp through a hair cloth as long as any juice will come. Put it into a cask in which it is to remain till it becomes fine which will be in about 14 days during which it must be carefully stacked & rack'd from the sediment into another cask as soon as it becomes fine. Here it may remain for some time but must not be permitted to ferment again
