To pickle Beef Take 10 Qts of water, 8 lbs of Bay salt, 1/4 lb of salt petre, 1 lb & 1/2 of raw brown sugar, boil them all together & let it stand till it is quite cold then pour it upon the Beef, above which put a board with a heavy weight upon it to press the beef - let it lie in the pickle 3 weeks Boil it over a very slow fire till it is quite tender, take it out of the pot & take out the bones (if there are any) put the board &
