Potatoe Bread Take 12 lbs of the most mealy potatoes and when boiled and peeled, break and strain them through a very coarse sieve and reduce them as nearly as possible to a state of flour mix it well with 20 lbs of wheat flour - of this mixture make and set the dough exactly in the same manner as if the whole were flour this quantity will make nine loaves of about 5 lb each in the dough & when baked about 2 hours will produce 42 lbs of excellent bread
