Pickle for Beef or Pork 12 Gallons of Water, 12 oz Salt Petre, 18 lbs salt 3 lbs of coarse brown Sugar boiled together for twenty minutes & well skimmed. Oatmeal Porridge Mix about 3/4 of a cupful of Oatmeal with enough cold water to stir it, & pout it into a small saucepan half full of water, stir it on the fire till it boils, turn it into a saucer, let it cool add sugar & milk to taste. Arrowroot (Mr. Cutler) Mix 1 Teaspoonfull of Arrowroot in a little cold water, & then pour boiling water or milk upon it flavouring with [lemon], sherry, or [saufe] flower water Short Bread 1 lb of flour, 1/2 lb of Butter, 4 oz of powdered loaf Sugar - mix well together without any water, knead it well with your hand, roll it out, cut it any shape you life, & bake in a slow oven for long time.
