[illegible] (second course) Put 4 oz of butter in the stew pan to melt a little Pepper and salt, then add about 6 oz of flour and 4 oz of parmesan cheese and shake the [illegible] thoroughly together until well mixed. Mix it with a good [illegible], then mould it with [illegible] [illegible] [illegible] large stew pan of boiling water to poach them and drain them on a sieve. Butter a [cutter-pan?] [place?] them in it with a little [consommee?] [illegible] in the [illegible] to [illegible] for about 20 minutes and let them get a light [illegible]. Serve quite hot with a little clear, thick glaze around them. Windsor Sandwiches 1 oz lean ham. 1 oz grated parmesan cheese 2 oz butter and cayenne pepper [illegible] in a mortar [illegible] [illegible] a [illegible] sieve,spread on [illegible] [illegible] of bread, fry in butter.
