Treacle Roly Poly Make a light paste & roll it out, sprinkle over it a layer of bread-crumbs, grate over this the rind of a lemon & squeeze over it the juice, then spread over this the best golden syrup and roll it up as a Jam Dumpling and boil. (Lucen Sep't 12th74) Black berry Jelly To every 3 lb of blackberries put a pint of cold water, boil 20 minutes, then strain [illegible] juice from the fruit, to every pint of juice put a pound of powdered Sugar sugar. Boil 25 minutes together. Put into Pots as quickly as possible & cover while hot. [name] Sept. 12th /74 Sauce for Boar's Head or Brawn Mustard, port wine, Seville Orange, the peel passed through boiling water & red currant jelly - a little pepper & salt if desired. Lord Sandys
